Cheesy Chicken with Prosciutto

Ingredients

  • 8 oz 
    Raw Chicken Breast
  • 1/4 cup 
    Parmesan Cheese
  • 2 tbls 
    Butter
  • 4 oz 
    Cured Ham, unheated
  • 4 slice 
    Monterey Cheese
  • 1 cup 
    White Table Wine
  • 1/4 tsp 
    Black Pepper

Directions

1. Slice halves of chicken breast length-wise, making 4 pieces. Put grated cheese on a piece of waxed paper and roll chicken in cheese to cover both sides.

2. Heat butter to foaming in a sauti pan or skillet, add chicken, and cook until golden brown, about 2 minutes on each side.

3. Lay a slice of prosciutto and a slice of cheese on each strip of chicken, and secure with a toothpick.

4. Cover pan and cook 2 minutes, or until cheese has melted and remove chicken to a warm plate.

5. Pour in wine, turn up heat, scrape pan with a tablespoon to catch all cooked bits, and boil 1 minute.

6. Serve sauce with chicken and season with pepper to taste.
